THE FEAST OF LUXURY BLUEFIN TUNA

“The bluefin tuna is a ʻgiantʼ in the tuna fish world. It has a rich nutritional value and is
naturally the most expensive.”

Japanese cuisine has always advocated light and healthy cooking in order to enjoy the natural flavour of food at its best. In keeping with this approach, seafood has always occupied a major position, with bluefin tuna in particular being a favourite. Every year, the Tsukiji Fish Market in Tokyo (now relocated to the Toyosu Market) conducts a New Yearʼs auction. The fishmongers all gather round to bid for the Pacific Bluefin Tuna, amongst which “Japan No.1ˮ is the largest and most expensive. The bid always reaches more than a few million Hong Kong dollars. What exactly is the charm of the bluefin tuna? Why does it cost so much to just have a taste of it?

  • The bluefin tuna is the “giant” of the tuna. It weighs up to 350 kilograms and has the largest body size, but it is rare and only accounting for less than 1% of the market. Being scarce, it is naturally the most expensive. Other varieties such as mediumsized yellowfin tuna and small blackfin tuna are regularly seen in the market. The tuna has high nutritional values, being rich in protein, DHA, EPA and unsaturated amino acids. Typically, you find that 100 grams of “Toro” contains 21.4 grams of protein and a variety of vitamins such as A, B1, B2, C, D and E, while the fat content is very low, only about 24.6 grams, which can help prevent diseases such as arterial stiffness and embolism.
  • Bluefin tuna may be famous in Japan, but it is not uncommon in Hong Kong. FUMI, a high-end Japanese restaurant in Lan Kwai Fong, Central, is committed to promoting Japanese food culture. From now until the end of March, a live tuna cutting show will be held every Thursday evening, allowing the people of Hong Kong to have a first-hand experience. Each Kyushu farmed bluefin tuna weighs up to 50 kilograms, and arrives Hong Kong by air to ensure its freshness and taste.

  • The restaurant will also introduce a bluefin tuna six-course menu and an à la carte menu, which includes a delicious three piece sashimi platter of tuna, showcasing the different parts of tuna in one go, and a tuna fish roll, an oily, salted tuna fish dish, and a hearty broth with spring onion, tuna and squid. These are authentic Japanese delicacies served in the perfect setting, an elegant restaurant of Japanese customs with artistic atmosphere.
  • In order to showcase the best of Japanese cuisine, FUMI is also committed to searching for seasonal ingredients from all over Japan in addition to the bluefin tuna, from the top of Hokkaido mountains to the tropical waters of Okinawa. Ingredients are all transported by air so their freshness are kept. All in all, it’s a great culinary experience, with sushi, sashimi, Omakase or Kaiseki all prepared and presented beautifully.

矜貴奢華藍鰭吞拿魚宴

日本料理一向崇尚清淡健康,以能吃出食材原味為最高境界。同時,在日本人 的飲食文化之中,海鮮也佔了一重大位置,當中就以藍鰭吞拿魚最深受他們 的鍾愛。每年日本東京築地魚市場 ( 現已搬遷至豐洲市場)也會進行一次新年競投,漁販們會齊集市場競投太平洋藍鰭吞拿魚,其中「日本一」就是當中最大最貴的 一條,拍賣價隨時超過幾百萬港元。究竟藍鰭吞拿魚有何魅力,居然會令日本人願意豪擲 百萬為嚐那一口鮮甜?

– 藍鰭吞拿魚是吞拿魚界中的「巨人」,重量可達 350 公斤,體型最大,但產量也是 最少,只佔市場不足 1%,非常罕有,所以身價自然最貴。而另外的品種就有中型的黃鰭 吞拿魚,以及小型的黑鰭吞拿魚等,是大眾在市場上常見的品種。吞拿魚的營養價值相當 豐富,合有豐富蛋白質、DHA、EPA 及不飽和氨基酸,以蛋白質為例,100 克的拖羅就 含有 21.4 克蛋白質,及多種維他命如 A、B1、B2、C、D、E 等,脂肪含量亦非常低, 只有約 24.6 克,能預防血管硬化及栓塞等疾病。

– 藍鰭吞拿魚是日本的名物,但要在香港品嚐到也未嘗不可。於中環蘭桂坊的高級日 本料理 FUMI,以肩負推廣日本飲食文化為使命,由即日起至三月底前,逢星期四晚會推 出現場即劏藍鰭吞拿魚表演,九州原條養殖的藍鰭吞拿魚每條重達 50 公斤,由日本空運 抵港,新鮮味美,亦讓香港人能親身感受日本飲食文化。

– 而平日餐廳亦會推出藍鰭吞拿魚六道菜嚐味餐單及單點菜式,包括有肥美的吞拿魚三段刺身拼盤,可以一次過品嚐吞拿 魚不同部位的美味,還有罕有而且口感 軟滑的吞拿魚腦天手卷、油脂豐腴的鹽 燒吞拿魚鮫,以及傳統的香蔥吞拿魚腩 蓉丼配清湯等,選擇豐富,吞拿魚刺身 入口即溶,讓食客在充滿日本風情及藝 術氣息的高雅餐廳內,享受日本的美味 佳餚。

– 而為了展示日本料理最好一面, 除藍鰭吞拿魚外,FUMI 也致力為食客 搜尋來自全日本的時令食材,由北至北 海道山峰上的材料,南至沖繩熱帶海域 的食材,往往是於日本收割或捕獲幾小 時後,便空運直送到港,以壽司、刺 身、Omakase 或懷石料理呈現在食客 餐桌上,力盡新鮮,務求營造不一樣的 體驗。
